I purchased a 10L MSR Dromedary water carrier after years of using MSR stoves and being very happy with them. The bag is exceptionally well constructed BUT the water tastes pretty strongly of plastic after just a few hours. Not excited by the idea of a multi-day hike with plastic water. Has anyone had any luck getting the taste out? I've tried vinegar, bicarb, lemons, even denture cleaning tablets (one of the weirder google suggestions) but no luck. Still tastes like plastic.

I have heard some reports of the Dromedary Bladders not tasting overly great. Generally, taste is quite subjective, and some users will notice it more so than others. It sounds like you've tried most of the options we'd suggest, but one option you could try is the Camelbak Cleaning Tabs, they tend to knock out any odd flavours hanging about.
